What 'Fixed Thali' Actually Means (and Why We Don't Do À La Carte)
No menu-scrolling, no per-meal ordering. Here's the reasoning behind Mumbai Dabbawala's fixed daily thali model.

Most meal-delivery apps are built around choice: browse a menu, pick a dish, order again tomorrow if you remember to. Mumbai Dabbawala works the other way around — you choose a plan once (veg or non-veg, weekly or monthly, a cadence that suits you), and a fixed thali arrives on your subscribed days without you needing to place an order each morning.
This isn't a limitation we're working around — it's the actual model the original dabbawala network was built on. A home cook prepares one thali for their household, and a dabbawala delivers that same thali to that same desk, every working day. There's no 'what do you feel like today' step, because the whole point was reliability, not variety.
In practice this means our kitchen plans a small number of thali variations per cuisine per day (never a sprawling menu), which keeps prep genuinely fresh rather than pre-made and reheated, and lets our kitchen team focus on getting the allergen data, spice level, and cook quality right for a handful of dishes instead of thin-spreading across fifty.
