What makes a real Gujarati thali (and why ours is different)

Sweet, sour, salty, spicy — a proper Gujarati thali balances four tastes at once. Here's how our head chef builds one.

A Gujarati thali is not a curry with rice. It's a balanced meal — dal, sabzi, roti, rice, kadhi, chutney, and something sweet — all served together, all tasted in one bite if you know how.

Chef Anita Shah, who runs our Gujarati kitchen, learned this from her grandmother in Ahmedabad. "You cannot separate the dishes," she says. "The tang of the kadhi is what makes the sweet shrikhand work. Eat them alone and it's just food. Eat them together and it's a thali."

Today's Gujarati thali on the calendar always includes: one dal, two seasonal sabzis, phulka roti, jeera rice, chaas, and a small dessert. All allergens are labeled on the /menu page — we never hide gluten, dairy, or nuts in the ingredients list.
